David Johnson, PhD, RD, CHE, MFP
Dr. Johnson is an Assistant Professor in the Department of Human Nutrition, Hospitality and Sport Management at The University of Alabama. He is a registered dietitian and chef. He is also a Certified Hospitality Educator (CHE) through the American Hotel & Lodging Educational Institute and a ManageFirst Professional (MFP) through the National Restaurant Association. He received his PhD in Hospitality Management from Iowa State University, focusing his dissertation research on exploring the use of gleaned foods in child nutrition programs. His education, academic, and industry experiences include nutrition, dietetics, culinary arts, and management. His research interests include culinary nutrition/culinary arts, child nutrition, sustainability, food insecurity, food waste, food recovery, farm-to-school, and food and nutrition management.
